Dangit! I forgot to get a picture before we ate it! Brit made enchiladas with chicken and corn tortas - a first time for us but yummy none the less. I like the corn tortillas better than the flour ones because the edges don't get all hard and chewy the way the flour ones do. What enchiladas have taught me about life: you can never have too much cheese. Cheese will always be your friend.
